Bored of paneer and soya? 8 protein-packed breakfast dishes you can make with kala chana

If you're tired of reaching for paneer and soya as your go-to source of protein, it's time to look beyond the usual suspects. Enter kala chana — also known as black chickpeas or Bengal gram — a nutrient-dense legume rich in plant protein and dietary fibre, making it ideal for anyone looking to build healthier, more balanced and filling meals.

Like other pulses, kala chana delivers a host of micronutrients, and its versatility means it can be transformed into sandwiches, parathas, breakfast bowls and much more. There is one golden rule, however: kala chana needs to be soaked for at least 8 hours, or ideally overnight, to make it easier to digest and quicker to cook.

Here are eight smart and delicious ways to add kala chana to your daily breakfast.

1. Tangy kala chana chaat

Boil the soaked chana and combine it with chopped onions, tomatoes, cucumber, coriander and green chillies. Finish with lemon juice, roasted cumin powder and a little chaat masala for flavour, and enjoy it fresh as a light, tangy and spicy bowl.

2. Protein-packed chana cheela

Forget besan — for a protein-rich start, combine soaked kala chana with ginger, green chilli, cumin and coriander, and blend into a smooth puree. Spread the batter on a hot tawa, add some grated paneer and cook to perfection with oil or ghee. Serve with curd and chutney.

3. Kala chana stuffed paratha

For a change, skip the paneer stuffing and use soaked kala chana instead. Mix boiled chana with onions, coriander, cumin, chilli and amchur powder, stuff the mixture into whole-wheat dough, roll out the parathas and cook with ghee or oil. Best enjoyed with pickle and curd.

4. High-protein kala chana poha

Poha is often dismissed as just carbs, so give it a protein boost. Toss boiled kala chana into regular poha made with flattened rice, tempered with onions, curry leaves, mustard seeds and turmeric. Add vegetables such as peas, carrots or capsicum to make the bowl more colourful and nutritious.

5. Kala chana vegetable upma

Another easy way to enjoy kala chana is by adding it to vegetable upma. Cook semolina with vegetables, curry leaves and spices, then stir in boiled kala chana. Serve with sambar or coconut chutney on the side.

6. Quick and filling chana sandwich

For a speedy high-protein breakfast, mash boiled kala chana with chopped vegetables, coriander, black pepper and a squeeze of lemon, then spread the mixture between slices of whole-grain bread. Toast with butter or ghee and enjoy with a side of coffee or tea.

7. Masala kala chana dosa

For a change, replace dal with kala chana and blend it with soaked rice, allowing the batter to ferment. Spread a thin layer on a hot tawa and cook until crisp. Serve with coconut chutney and sambar for a fermented, probiotic-rich twist.

8. Stuffed kala chana idli

Turn your plain idli into a stuffed one with a mashed mixture of kala chana and spices. Pour the batter into the mould, add the stuffing and top with another layer of batter. Steam the idlis to perfection and enjoy with sambar and coconut chutney.
